So I went back to the kitchen (and my laptop) and created a full written recipe for the blog, including two methods to make it: oven-roasted or quick stovetop. Plus, I’ve added beautiful new photos, helpful tips, and all the details to make this dish a success in your own kitchen.

Tomato Mascarpone Pasta

This is hands down one of the best pasta recipes I’ve ever made. Creamy, tangy, comforting, and unbelievably easy, it’s made with just a handful of ingredients, but tastes like something you’d order at a fancy Italian restaurant. Whether you roast the tomatoes or keep it quick on the stove, the mascarpone melts into a silky, rich sauce that clings to every bite.
