It's one of those dishes I come back to again and again, especially this time of year. It’s fresh, satisfying, and honestly? I think it’s one of the most underrated pasta recipes in all of Italian cuisine.

You hear a lot about Lasagna, carbonara, cacio e pepe, and Bolognese... but Pasta alla Norma rarely gets the attention it deserves. And that’s a shame — because it’s absolutely delicious. The combo of roasted eggplant, garlicky tomato sauce, fresh basil, and salty ricotta salata is pure magic. It’s the kind of dish that feels simple but tastes like summer on a plate.
