Crispy Potato Fritters & A Dreamy Sour Cream Dip

A nostalgic family recipe I still make every year.

Hi foodie,

You know how some recipes just belong together? That’s exactly how I feel about today’s duo. After a full week of testing (and snacking… a lot), I’m finally sharing two recipes that are simple, nostalgic, and ridiculously satisfying: my family’s crispy potato fritters (latkes) and my fabulously fresh sour cream & chive dip.

This is the kind of easy comfort food you can whip up on a busy weeknight, serve as a crowd-pleasing appetizer, or enjoy straight from the pan because you “accidentally” made too many. I won’t judge. 😉

Crispy Potato Fritters (Potato Latkes)

These potato fritters are exactly what they should be: crisp, savory, and beautifully golden. They’re made with simple ingredients you already have at home and come together quickly. In the post, I also share pro tips for getting them perfectly crispy, like rinsing and squeezing the potatoes, using the natural potato starch, and fixing the batter if it gets too wet.

They’re perfect for Hanukkah, cozy dinners, or any time you need a fast, comforting side. Serve them hot from the pan for maximum crispiness.

3-Ingredient Sour Cream & Chive Dip

Fresh, creamy, tangy, and ready in just 2 minutes: This dip is pure magic for how little effort it takes. Sour cream, chives, and lemon, that’s it. It’s cool, creamy, refreshing, and the EXACT flavor pairing your potato fritters have been waiting for.

You can serve it with fritters, chips, veggie sticks, crackers, fresh bread… or just eat it with a spoon because it’s that good. In the post, I share serving ideas, variations, and ways to use it beyond snacking.
